It's 10 degrees outside?!

It's a snowy, cold day here in Oklahoma. So cold and snowy in fact, that the college campus has closed for today and tomorrow (meaning no work for me!) and Eric gets to work from home.

We've had a pleasant day thus far - got up early, did an at-home work out (if you have an iphone, check out the app "Nike Training Club" - it's amazing) and cleaned the bathroom. That might not sound like a good day, but it definitely has been for me. There's always so much to do around here, so when I have a chance to actually do it, it feels amazing.

I'm thoroughly convinced that no snow day is complete without tomato soup and grilled cheese sandwiches, which is precisely what we had for lunch today. Eric isn't a fan of the soup straight out the can, so I did a little research for a simple tomato soup recipe and I found one that I love!

All you do is combine 28 ounces crushed tomatoes, 1 cup milk and one cup half-and-half. Add in some seasonings (I like basil, celery seed, garlic powder and salt & pepper) then heat it up and your done! It's seriously delicious - try it!

Needless to say, it's been a fun day and we get to do it all over again tomorrow!
